Celebrate Fried Chicken Day at The Jerk Shack and Freight Fried Chicken
WHAT:
In celebration of National Fried Chicken Day on Sunday, July 6, 2025, James Beard nominated chef Nicola Blaque invites the community to indulge in her nationally-recognized recipes at The Jerk Shack and Freight Fried Chicken. Each restaurant is offering a limited-time fried chicken plate special: two pieces of fried chicken with any side for just $10.
Guests can enjoy the special at The Jerk Shack exclusively on Sunday, July 6, including its island-style fried chicken paired with bold Caribbean sides like pineapple slaw and masala fries. Meanwhile, Freight Fried Chicken will offer its bone-in and boneless fried chicken plate throughout the holiday weekend, from Friday, July 4 to Sunday, July 6, highlighting classic Southern flavors with sides such as mac ’n cheese, seasoned fries and fried corn. Plates are available for purchase during regular business hours at each restaurant.

ABOUT CHEF NICOLA BLAQUE
Lattoia Nicola Massey, known professionally as Chef Nicola Blaque, is a restaurateur and chef based in San Antonio, Texas. Chef Blaque is the executive chef and owner of the Jerk Shack, a Jamaican-inspired restaurant in San Antonio. The restaurant that offers fare like jerk chicken, braised oxtail, and more quickly became a staple after opening in 2018. In 2024, The Jerk Shack was awarded a Bib Gourmand designation from the prestigious Michelin Guide. In whatever she does, Chef Blaque is passionate about making food that tells a story. In early 2024, she opened Freight Fried Chicken at the popular Pearl district in San Antonio – a restaurant that pays homage to formerly enslaved women that sold fried chicken as a way to support themselves in post-Civil War Virginia.
In addition to running successful concepts that have been recognized by GQ, Eater and more, Chef Blaque is an Army Veteran, a graduate of The Culinary Institute of America in San Antonio, a private chef for members of the San Antonio Spurs, a two-time CultureMap San Antonio Chef of the Year, a James Beard Award nominee, a wife, mom and more. She also serves on the board of Visit San Antonio in a culinary advisory role. Having been born and raised in Jamaica until she was five years old, Chef Blaque is passionate about introducing people to the flavors of the Caribbean. Though she’ll be the first to tell you that the dishes she’s serving up aren’t always traditional Jamaican dishes, she’s passionate about infusing those flavors into cuisine her patrons know and love.
ABOUT THE JERK SHACK
The Jerk Shack is a concept by Chef Nicola Blaque and her husband Cornelius Massey. After serving ten years in the Army, Blaque began working as a private chef to explore her passion for cooking. She relocated to San Antonio from Hawaii to pursue a degree at the Culinary Institute of America where she graduated in 2016. Blaque returned to her Jamaican roots and began focusing on Caribbean cuisine, working to bring the unique flavors to South Texas. In 2018, the team launched The Jerk Shack, a restaurant inspired by the flavors of Jamaica and the Caribbean. The Jerk Shack has received national praise including being featured by Eater as one of the 2019 Top 16 New Restaurants in America as well as being included in GQ’s 2020 Best New Restaurants in America. In 2024, The Jerk Shack was awarded a Bib Gourmand designation from the prestigious Michelin Guide.
ABOUT FREIGHT FRIED CHICKEN
Freight Fried Chicken is Chef Nicola Blaque’s homage to the rich culinary history and traditions shared amongst Black Americans. Freight Fried Chicken draws its inspiration from black women in post Civil War America that sold fried chicken to rail passengers traveling through Gordonsville, VA. The women became known as Waiter Carriers and their chicken recipes would attract travelers who would go out of their way just to try the famous chicken. The sale of fried chicken allowed formerly enslaved women to support their households and create racial progress in a time fraught with dissension. Freight Fried Chicken serves crispy fried chicken, both bone in and tenders, as well as fried chicken sandwiches, with delectable sides like mac n cheese, loaded potato salad, slaw and seasoned fries.
